In Bibbiano, in the heart of Parmigiano Reggiano country, the Scalabrini family has made its own cheese since 1963, personally overseeing every stage of the chain, from around 500 cows in the barn to cheesemaking and ageing. The 90-minute guided tour takes visitors through the barns, the processing room and the warehouse where thousands of wheels rest, ending with a tasting of different ages.
