Antica Corte Pallavicina

Polesine Parmense, Emilia-Romagna

The manor house, built in the early fifteenth century on an earlier fortification of the Marquises Pallavicino, holds what is considered the oldest culatello curing cellar in the world, dug underground and dating to 1320. Here the Spigaroli family, who helped secure Protected Designation of Origin status for Culatello di Zibello, ages culatelli, wines and Parmigiano Reggiano in the natural humidity of the Po's banks. The Museo del Culatello e del Masalén, set up in the manor, tells with maps, photographs and period objects the farming history of the lower Parma area tied to this cured meat. Guided tours let visitors descend into the ancient cellars and discover up close knowledge passed down over generations.
