Founded in 1967 by local dairy farmers joining forces, the cooperative dairy now has 62 member farmers and five plants across the provinces of Modena and Reggio Emilia, producing around 100,000 wheels of PDO Parmigiano Reggiano a year. The roughly hour-long guided tour follows the cheese's whole journey, from milk processing to the warehouse where more than 33,000 wheels mature, and on to the cutting room. The visit ends at the on-site shop with a tasting of the longest-matured wheels.
