The Bartolini family's olive-oil tradition began in 1850 in Arrone, a medieval village in the Valnerina, with an animal-powered press and manual fiscoli mats. Today the company produces PDO Umbria extra-virgin oil, Colli Assisi-Spoleto subzone, selecting hand-picked olives cold-pressed according to the family's master oil-maker's standards. Guided visits to the press take visitors through the entire pressing cycle, from milling the olives to extracting what's known as Umbrian green gold. The press is a few kilometres from the Cascata delle Marmore waterfall, in one of Italy's most beautiful villages.
