La Vecchia Dispensa

In the village of Castelvetro di Modena, the guided visit climbs up to the sixteenth-century Torre delle Prigioni, where batteries of barrels have held traditional balsamic vinegar since the early twentieth century. The route passes through the historic family shop before reaching the vinegar loft, and ends with a guided tasting of five vinegars, including IGP and PDO Modena varieties. An intimate, appointment-only experience in one of the most evocative corners of Emilia.
