Villa San Donnino, on the outskirts of Modena, preserves a balsamic vinegar tradition rooted in the early twentieth century, when the family that gives the villa its name already kept barrels in a private vinegar loft. In 1947 Umberto Lonardi took over the property, finding the abandoned barrels, and began the production the family has carried on for three generations. The roughly hour-long guided visit leads through batteries of barrels in different woods where the product slowly matures and evaporates, ending with a tasting of balsamic condiments and Traditional Balsamic Vinegar of Modena aged 12 and 25 years, plus balsamic jelly and ice cream. A journey through one of the products that best defines the Modena area's identity.
