Prosciuttificio Montevecchio was founded in 2002 in Savigno, in the Samoggia valley at the foot of the Tuscan-Emilian Apennines, where an ideal microclimate has aided the Gherardi family's ham curing for more than twenty years. The visit follows the whole production cycle, from fresh meat to salting, massaging, brushing and greasing, through to resting in the curing rooms. The roughly hour-long tour ends with a guided tasting of different prosciutto cuts and cured meats paired with three wines and home-baked bread. An experience that combines food culture and craft tradition in the heart of the Bologna hills.
