The ham house was founded in 1957 by Giovanni Prolongo, a simple worker who fulfilled his dream of building his own production in the heart of San Daniele del Friuli. The company, now run by the third generation, still makes the historic Scatoletta dell'Emigrante using the original 1950s machinery handed down from grandfather Giovanni. The guided visit passes through the curing rooms, where the legs hang on traditional wooden racks, and ends with a tasting in which the ham is hand-sliced by master slicers Alessio and Arianna Prolongo.
