Founded in 1866 by Domenico Viganotti and registered under the name of his son Romeo in 1901, this workshop in the heart of Genoa's old town still makes bean-to-bar chocolate today. The workshop-museum on Vico dei Castagna preserves late-nineteenth-century machinery, including a stone melangeur for grinding cocoa and hazelnuts, along with the shop's original counter and shelving. Among its artisan specialities are Boeri, Croccantini, Cremini and Zuccherini, made to recipes more than 150 years old.
