The dairy was founded in Dolianova in 1970, when the Argiolas family built its first own plant a few kilometres from Cagliari. For more than fifty years the company has processed sheep's and goat's milk to make Pecorino Sardo, Pecorino Romano and other specialities, ageing up to 200,000 wheels in its warehouses. The roughly 90-minute guided tour crosses the different stages of cheesemaking and ends with a tasting paired with a glass of wine. For the more curious, there's also a "Cheesemaker for a Day" workshop, to get hands-on with cheese production.
