The Cabras lagoon, a fish reserve of more than 2,000 hectares in the Oristano area, has been managed since 1982 by a consortium of fishing cooperatives holding the concession for the lagoon. Wild grey mullet is caught here and, processed using traditional techniques, turned into the famous bottarga, making Cabras the world capital of this product. Grey mullet bottarga, along with "merca" and dried fish, is today a Slow Food Presidium protecting its origin and production method. Production visits let visitors follow the salting, pressing and drying stages of the mullet roe.
