Bisson

Chiavari, Liguria

Bisson was born in 1978 in Chiavari from an idea of Pierluigi Lugano and his wife Wally Bisson, who began vinifying grapes bought from small growers scattered along the Tigullio and Cinque Terre coast. In the late 1990s Lugano had the idea that would make the winery famous: ageing classic-method sparkling wine on the seabed off Portofino, at a depth of 60 metres and a constant temperature of 15 degrees. In May 2009 the first cages of bottles were submerged, recovered the following year: this gave rise to Spumante degli Abissi, today a point of pride for Ligurian and Italian winemaking. Also pioneers in rediscovering the heroic wines of the Cinque Terre, Bisson remains a reference point for Liguria's frontier viticulture.
