Founded in 1974 by Count Lamberto Cesarini Sforza together with Giuseppe Andreaus, the Ravina winery was among the key players in the birth of Trentodoc, Trentino's denomination for the classic method. The bottles age on the lees for at least twenty months in evocative underground tunnels dug into the rock, kept at a constant temperature between 12 and 14 degrees. Since the first sparkling wine was bottled in 1976, production has now reached around 1.2 million bottles a year. The cellar visit offers a close look at this underground setting and the long ageing process that defines the Trentino classic method.
