Founded in 1957 to make the most of the milk from hundreds of Aosta Valley farmers, the Cooperativa Produttori Latte e Fontina is based in Saint-Christophe and runs the Visitor Centre opened in 2003 at the maturing warehouse in Valpelline. The route unfolds in three sections dedicated to history, the local area and the techniques for turning milk into PDO Fontina. Among the most striking moments of the visit is the large warehouse where the wheels are cared for one by one by hand, turned and brushed until they reach optimum maturity. An experience telling the short supply chain of the cheese that symbolises the Aosta Valley, from pasture to table.
