The salt pans between Marsala and Trapani were authorised between 1492 and 1508 by the Spanish viceroys of Sicily, and the first record of a salt sale dates to 1562. The Mulino d'Infersa, a restored and still-working piece of sixteenth-century industrial archaeology, is dressed in its great white sails in summer to catch the wind and turn the millstones. At sunset the evaporation pools take on colours that have made the Stagnone landscape one of the most photographed in Europe. Guided tours take visitors among the salt-collection pools, with tastings of flavoured salt and local products.
